Recipe, if anyone is interested:
5oz package of fresh baby spinach
2 tsp vanilla extract
3 Tbsp melted coconut oil
1/2 cup apple sauce
1/2 cup sugar
2 cups whole wheat flour
1.5 tsp baking powder
1 tsp baking soda
1/2 tsp salt
- In a blender, combine spinach, eggs, vanilla, apple sauce, and coconut oil and blend.
- In a large bowl, mix dry ingredients: flour, sugar, baking powder, baking soda, and salt
- pour wet ingredients into dry ingredients; mix to combine. pour into muffin tin with liners (makes about 12).
- Bake at 350F for 25 minutes.
next time, I plan to add raisins or mini chocolate chips!
